With a nod towards hand-cut steaks and fine wines, Forge & Vine offers downtown Columbia diners an unpretentious and casual elegance to enjoy the Colorado mountain ski lodge setting. Inside, little touches show attention to detail, like the mosaic spelling out "F & V" on the floor, the railing crafted from local river driftwood, to the division of the space itself--the Forge is a non-smoking steak house, while upstairs houses the Vine, a casual wine bar. On the rooftop, guests can enjoy? Weather permitting--the Terrace that overlooks Columbia and host live music. The menu takes cues from American Southwestern fare, offering up a variety of tastes, including baked crab dip, prairie pepper hummus, rock shrimp pasta, and grilled range chicken. The steaks all emanate from corn-fed beef, sides are Ala carte, and span from center cut filet to KC strip, top with the Forge's own southwest steak butter. A lunch menu includes its own specials, sandwiches, and burgers. Drink selection runs the gamut from fresh squeezed cocktails to bottles of vintage wine that are well situated to accompany the cuisine. Guests can also make use of cigar and wine locker services.
